Protein mug cake

My beautiful mug cake. 1tbs of coconut flour. 1tbs PB2. 1tbs whey protein. Pinch of baking powder. Like 1/2tbs cocoa powder. 3tbs or 1 egg white. 2-3 tbs almond milk. Microwave for 1:30. Mix up pb2 and a tbs of almond butter with almond milk and add to the top. Having arctic zero strawberry ice cream on the side.

Chocolate protein cookies

When I can experiment with new recipes and healthy recipes at that. I am happy. It’s one thing I love to do. On contest prep that was one big thing that I really missed so its nice getting back to that. To make these cookies I used
3/4 cup almond meal/flour
2 scoops chocolate whey protein
1/4 cup cocoa powder
2 tbs pb2
1/8 tsp baking powder
2 egg whites
1/8 cup honey

Mix everything together. Will be very thick and sticky like cookie dough. Spoon 6 cookies on a sprayed baking pan. I created little caves in each cookie and added peanut butter co dark chocolate dreams peanut butter to the center then added the tiny bit of cookie mix I had to the top of each cookie covering the peanut butter. Baked on 350 for about 10mins

Carrot and zucchini bars

1 cup almond flour
1/2 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
1 cup shredded zucchini
1 1/2 cup carrots shredded
1/4 cup brown sugar
1/4 cup honey
1/8 cup coconut oil
1/4 cup applesauce
3 egg whites

Spray baking tin with non stick cooking spray. Bake on 350 for 25 minutes

Date Bars

These are so good! Paleo treat and has very few ingredients which makes it easier to enjoy! Grain free, sugar free, dairy free. I followed @livinpaleo recipe exactly! click here for recipe

Protein chocolate chip cookies

I got this paleo friendly recipe from power cakes she has so many amazing recipes! I made a few minor changes but not very much! Dairy free. Grain free. Sugar free!

Wet Ingredients:
2 Whole Eggs
2 Egg Whites
2 TB Melted Coconut Oil
1/2 mashed banana
2 tsp of Vanilla Extract
2 tbs honey

Dry Ingredients:
1/2 cup coconut flour
1/4 cup ground Flax
1/4 cup Protein Powder
2 tsp Baking Soda
Sprinkle of Cinnamon
Dark chocolate chips

Oatmeal cookies

1/2 cup almond meal
1 cup oats
2 tbs coconut oil, melted
1/4 tsp salt
1/4 baking powder
1/4 tsp vanilla
1 egg
1/8 cup honey
1 tbs brown sugar
Add raisins and or dark chocolate chips if desired
I scooped out the batter on to a greased baking sheet using a tablespoon and made 1 dozen
Bake on 350 for about 10-15 minutes

Frosting for cake and cupcakes

I put this frosting together after finding two delicious flavored better’n peanut butters. Banana and chocolate. What better combination. You can use any peanut butter you would like in this recipe.

1/4 cup plain Greek yogurt
2 tbs each of better’n chocolate peanut butter and better’n banana peanut butter
1/4 cup of honey
1/8 cup cocoa powder

Mix up and put on your favorite deserts.

Chocolate peanut butter protein cake

1.5 cup oats
3 scoops chocolate whey protein
1 tsp baking powder
1/2 cup stevia
2 egg whites
1 cup unsweetened chocolate almond milk
1/3 cup applesauce
1tbs cocoa powder
1/4 cup Cottage cheese
3 tbs PB2 (peanut butter powder)
2 tbs dark chocolate chips

Frosting:
1 scoop chocolate whey
1 tbs PB2
Add water and almond milk (just a little) until it’s a nice consistency for frosting)
Do not make until immediately ready to put on top of cake.

Mix all ingredients in a bowl. Spray a pan with non stick cooking spray. Put into pan and let bake at 350 degrees for about 30 minutes. Once baked all the way through, let cool, take out of pan and add frosting.

Blueberry vanilla protein muffins

A delicious recipe I got from one of my IG buds, blog- thechunkytales.tumblr.com

1.5 cup oats
3 scoops vanilla whey protein
1 tsp baking powder
1/2 cup stevia
2 egg whites
1 cup unsweetened vanilla almond milk
1/3 cup applesauce
1tbs vanilla
1/4 cup Greek yogurt
1/2 cup blueberries

Mix all ingredients together
Bake in the oven at 350 degrees for about 20 minutes or until the fork comes off clean when you poke one.

Cinnamon Apple Muffins

This is from cleaneating.com they call these clean eating cinnamon apple muffins. They really turned out delicious!

2 cups wheat flour
2 tsp baking powder
2 egg whites
1/2 cup honey (I halfed the honey and used 5 packs of stevia also)
1/4 cup coconut oil
3/4 cup milk
1/2 cup unsweetened applesauce
1 medium apple chopped
2 tsp cinnamon

Directions:
1. Preheat oven to 350
2. Mix flour, cinnamon, chopped apples, and baking powder
3. In a separate bowl mix egg whites, honey, stevia, oil, milk, and applesauce
4. Mix the two bowls together,
5. Line muffin Tin with paper and spray with non stick cooking spray
6. Put mix into tins
7. Bake 15-20 minutes
