Sweet Potato Egg White Pancake

I love simple recipes!! This is something I decided to put together since I had left over baked sweet potato for dinner.
I took about 1/3 of the cooked sweet potato. Mashed it. Added 3 egg whites and one egg. A scoop of protein powder (someone tried adding coconut flour and came out great as well) Some cinnamon and about a tsp of vanilla. AMAZING! Very simple and healthy breakfast!!
